Spring is here but not spring weather. Much as I'd like to be moving towards making lighter dishes, it is often chilly, windy and wet still, though the days have warmed up. We still need warm comforting food.
this good little dish for supper the other day using very few ingredients: a few
artichokes, a couple of potatoes, garlic, parsley, olive oil. My artichokes were "Sardo Spinoso" variety, from Sardegna, tapered and with a mean short sharp thorn on the end of each leaf, but any kind of artichoke would work
The preparation is really straight forward. I cleaned up the artichokes in the usual way, (see my Heart upon Hearts post) then sliced and parboiled them 10 minutes till tender. I also peeled and sliced the potatoes and parboiled them too.
layered the artichokes and potatoes in turn, scattering some
garlic and parsley over each layer and seasoning with salt.
A perfect earthy and healthy supper, if you're a small eater, or a tasty side dish to go with a meat or fish course.
For a richer dish, you could grate Pecorino - aged but not too salty - over each layer and cover the top with breadcrumbs and cheese, and instead of water you can pour in two lightly beaten eggs.You could even put some cooked ham between the vegetable layers.
